Bossam (boiled pork wraps)

Bossam is pork belly boiled whole, sliced, and wrapped in cabbage or lettuce with a dab of saeu-jeot (salted shrimp) and kimchi — a dish that shows up as often at a gukbap counter as at a dedicated bossam house. Half of our 22-strong list, in fact, is filed under Gukbap & Hot Soups rather than a standalone bossam category, because it's usually ordered as a side to a soup, not a meal on its own.

This is one of the more accessible categories on price: 14 of 22 sit in the ₩ band under ₩15,000, with only one entry above ₩40,000. Walk-in access is nearly universal at 21 of 22, and solo dining is unusually well supported here — 10 of the 22, the highest solo count of any dish hub — reflecting how often bossam gets ordered alongside a one-person soup order rather than a group spread.

Namdo Bossam Pajeon in Jangan-dong pairs its namdo-style bossam with three house-fermented kimchis, and Incheonjip, a roughly 50-year-old tavern in Dadong, is among the oldest names on this list (the category's oldest listing dates to 1977). Two of the 22 carry official recognition.
